America’s Test Kitchen stepped out of US borders to make contact with astronaut Megan McArthur aboard the International Space Station. Their mission was to find out how to do food in zero gravity.

Space missions are super complicated, and even simple stuff like eating can become a logistical nightmare. Cargo space is at a premium, so food can’t be too bulky, and in a microgravity environment, crumbs and liquids have a tendency to go everywhere. That reality could have consequences ranging from the irritating to the deadly if the wrong piece of equipment is compromised.

The recipes will sound familiar to the struggle-mealers out there. “The one thing we have at almost every meal is tortillas,” McArthur says, “Because we don’t have plates, of course, and the best way to mix up your food is to put it in a tortilla.”

The worst part though? “I do miss having hummus up here.”
